Of all the sherries we tasted in Jerez, I liked the Amontillado the best. I regret it now, but I should have filled up a bottle from this cask when I had the chance. I expected to encounter it more often, but once we left this region, sherry either was harder to find, they didn't know what I was asking for, or only had the dry, white variety.
