The largest (most touristy) of the Pueblos Blancos is Ronda, a city split by an enormous gorge and an impressive bridge. They also have the oldest bull ring in Spain and the city is surrounded by beautiful countryside.

We stayed two nights in Ronda, one in the city situated directly on the gorge at the Hotel Don Miguel and a very pleasant second night in the countryside at Arriadh Hotel, another very special place and one of my personal favs of the trip.
